Directions:
Sauté 1/2 large onion and 2 large cloves garlic in pan w/1 tsp. butter
Brown 1 lb lean ground beef (preferably organic) in same pan with onions and garlic
In large sauce pan bring to boil:
1 qt organic low sodium veggie broth
4-cups distilled water
½ pkg. 15 bean soup beans (no spice pkg.)
½ lg onion
¼ cup fresh chopped chives
2 cups cut carrots
4 med. Red potatoes cubed
1 lb lean ground beef
1 Tbsp. Bragg Sprinkle herbs
1 tsp freshly ground black pepper
1 lg. tomato
2 heaping tbsp. pearled barley
Add cooked ground beef
Cook on low/med heat for 1 & ½ hours
Garnish with organic cheddar cheese & Serve with tortilla chips

You can also add jalapenos to taste
P. S. Vegetarians simply omit the beef. Still delicious!
